Rubina’s Excellent Banana Bread

TRH Rubina's Banana Bread

1 c sugar
1/2 tsp salt
1/2 c butter or margarine-one stick
3 ripe bananas-very ripe is great
2 eggs-beaten
1 tsp baking soda
2 c flour
1/2 c nuts chopped-pecans or walnuts

Cream sugar, salt and butter/margarine with a beater
Add the eggs and mashed bananas and blend well.
In a separate bowl, add baking soda and flour, sift and mix
Add dry ingredients to the creamed mixture and mix until just blended then ad the nuts
Turn into a greased loaf pan and bake for ± 1 hour at 325C or till brown and when you stick a toothpick into center it comes out clean.
Do not overbake and start checking with toothpick as soon as it starts looking brown which will be around the 1hr mark.
I like to drizzle a little powdered sugar frosting over the top while it is still warm, or just spread a little butter over the top instead.
It is wonderful bread and the best banana bread I have ever eaten.

Ray’s Ouma’s Banana Bread!
One bottle wine of choice….. *NB
125g butter (USA – one stick)
250g sugar (USA – 1 Cup)
2 eggs
4 medium sized ripe bananas
500g flour (USA – 2 cups )
1 teaspoon vanilla essence
1 teaspoon bicarbonate of soda
Half a cup of boiling water
1 teaspoon baking powder
1. Preheat your oven to 350 F
2. Pour one glass of wine. Sip.
3. Break the bananas in small pieces and mash with a fork.
4. In a separate bowl, mix the butter and sugar until creamy. Sip, sip wine.
5. Add eggs and bananas and stir well. Sip Wine. Make sure you turned the oven on.
6. Pour wine. Sift the flour into the mixture and add the vanilla essence. (Ag just throw it in – no need to sift)
7. Dissolve the bicarbonate of soda in the boiling water, and add to the mixture together with the baking powder..
8. Spray Pam all over your bread pan. Throw mixture into it.
9. Pour another glass of wine and let it rest for 45 minutes.
10. Stumble to oven, take it out and Let the banana bread cool before turning out onto a cooling rack.
11. Don’t be stingy with the butter when serving it with some more wine!.
