“I’m originally from Puerto Rico. I was born in Santurce and raised in Rio Piedras. I currently live in Florida – since 1999. I have a doctorate degree in Medicine; completed in 1976. My Internal Medicine specialty was completed in 1979. Worked for Puerto Rico’s health system until 1985. At this time, I’m happily retired after working for the federal government for almost 28 yrs. I also worked for the government of Puerto Rico from 1979 through 1985 …. for a total of almost 40 years as a physician. I want to offer any knowledge that I have to anyone “out there” who is interested. My views are liberal in almost every sense. My knowledge is “eclectic” – a bit of everything. Music and reading are my passion. Blogging has also become a very interesting endeavor. Metaphysical topics attract me. I’m interested in news – reporting human issues like injustice, discrimination and abuse – the “wrongly” affected. My intention is to bring this knowledge to an understandable level and to help anyone in need.”
… at this time in life, the current political climate has affected me in many ways. I’m trying to get over this reality and go back to blogging about the many different topics I blogged about. It’s taking a bit of time … so please, bear with me!!

Hi there, I’m Lisa and welcome to my Home Cook Simple recipe blog. I will be sharing recipes and meal ideas that inspire me to cook at home. A little peek into my kitchen. I love to cook and bake simple! So thought I would make this blog to keep a diary of all the recipes I make at home and to share my love of (have a go) cooking. I’m a mum to three beautiful girls and wife to my lovely husband James and get a lot of satisfaction out of cooking for them. I was never always the greatest at cooking, I was more of a convenience food cook, frozen food, ready meals, ready-made sauces etc, up until around 9 years ago. I became more confident cooking at home while taking my middle daughter to a local sure start centre, where she could go into the crèche within the children’s centre and I could join in with the activities set up for the parents. Each week we would make different things, some basic baking, such as biscuits and buns etc, and by going to these weekly sessions, I was given the confidence to try out new things at home and be a bit more adventurous in the kitchen. Since then I’ve gone on to make all my own sauces, family birthday cakes, trying out new recipes, coming up with my own recipes and I’ve just really enjoyed cooking and baking since. I work part-time, so feel lucky that I have the time to do quite a bit of cooking at home. I like to try new recipes and adapt or tweak them a little bit, depending on ingredients I have in and what needs using up in my fridge. I will post recipes and food inspiration regularly as I carry on with my cooking journey.

I came across a picture of this cake many months ago on the internet and had decided there and then, that I would try this on our anniversary. The recipe seemed simple but loooong, still it seemed worth the effort for this particular occasion.

I planned this cake for weeks before the Halloween day and I was so glad when it turned out exactly as I had envisioned it as! In my mind’s eye, I saw a vibrant orange and brown cake with some fun decorations and garnish.

I enjoy baking cakes more than eating them. My hubby finds that hard to believe because I am a huge foodie and crazy for sweets but there is something about baking that definitely soothes me. It may be due to the fact that I whip my batter by hand instead of using the electric beater and it can be a good activity to channelize all your stress into the vigorous whipping hand exercise 😉

Decadent treat to have with a cup of coffee or tea. Really quick and easy to make. I love a recipe that doesn’t need scales. I always use the same basic ingredients – plain and milk chocolate,  marshmallows  and digestive biscuits ( gluten-free or wheat). To these I vary what I add. For this post I used dried apricots and cranberries. Sometimes I use pistachios and other dried fruits.

There’s something about Red Velvet that I like. Perhaps it’s the intriguing dark, red colour. Perhaps it’s the subtle chocolatey taste, perhaps it’s that tinge of sourness. Heck! It’s everything about Red Velvet that I like. It’s hard not to like them and I find myself not being able to say no whenever I am offered with one.

I do not use any other recipe when I need a VEGAN CHOCOLATE CAKE. This one is moist and incredibly easy and above all mega yummy!
I made the this recipe x3 and had 6 dozen cupcakes, which I made for our granddaughter’s 1st birthday party. 👶

This one happened by accident.  I needed a treat to take to a get together, and then hunted in the baking cabinet and found these ingredients, so this was what happened.  It was well received, and I also made it more than once thereafter.  I winner and keeper.

Blueberries are in season! They are huge – the size of cherries! – and sweet like dates. Had I not known that they were organic, I would’ve thought they were on steroids or something. As much as I love just popping them in my mouth all day long, one could only consume so much, and they are highly perishable. I had to do something about it, and quick! I recalled an old recipe I had for whole wheat raisin bread, so I dug it up and started playing with it.

We do not cook on Shabbos. Food must be ready before sundown on Friday, and nothing could be cooked or even reheated until after sundown on Saturday. Yet the tradition demands hot food to be served both on Friday night and on Saturday afternoon. Friday night is relatively easy as you finish cooking or heating things up right before lighting Shabbos candles, and hot dinner is ready to be served. But how do you keep it hot for Saturday afternoon?

I’ve been dreaming of owning a Dutch oven (cast iron pot) just so I could make this bread but that didn’t justify the price of it in my head. I can bake perfectly good bread without the Dutch oven, thank you very much. So, when my daughter surprised me with it for Christmas I was overjoyed. We will ignore the fact that it took whole three months before I actually baked the bread and instead focus on the recipe.

This is our favorite challah recipe. I make it every week. It works in the bread machine or in the food processor.
Depending on the time of year, I often make the dough in the bread machine. I put the ingredients in the bread machine before I go to work Friday morning. Then, I set the timer so that the dough will be done when I get home from work.
The first thing I do when I walk in the door is braid the dough. I let the loaves rise and bake them just before Shabbat. It is so great to have fresh baked challah for Shabbat!

Making a snack at home makes us feel happy as well as give us a satisfaction that they are home made. This Indian style scramble is one such type that can be made in a jiffy with few ingredients. This is a tea-time snack that can be made with left over bread of any flavour and variety.

This really does look good enough to eat even though I say it myself!  And of course you are getting some fresh berries which are wonderful for you.  The more berries the better.  I love nuts so I’ve used walnut pieces but I sometimes use toasted hazelnuts or almonds. The base bread is fruit loaf and once you have made it pop it in the freezer and enjoy whenever you feel peckish.  Toasted with butter I love it for breakfast and afternoon tea.  It also makes a really decadent pudding if you add some vanilla ice cream and maple syrup.

Hariyali Paneer Tikka is mouthwatering tikka recipe of paneer. Originated from North India. In hariyali paneer tikka use fresh green paste, yogurt, lemon juice; which gives  refreshing flavors. Hariyali paneer tikka is not like other paneer tikka because in hariyali paneer tikka, garam masala is not used and secondly it cook in less time.
