I have a three-volume set of Confucius teachings. Years ago, when we were all young and passionate, and tended to argue earth-shattering issues till wee hours of the morning, with guitars and Georgian wines (that’s a country, not a state), sometimes, when an argument hit a dead-end and voices got hoarse, one of us would pull a Confucius volume, open it at random, and pronounce, “Confucius say..”

This is a combination of two salads. Years ago in Israel, my aunt served a simple, yet delicious and healthy salad. It was just thinly sliced celery with diced scallions, dressed Israeli style, with lemon juice and olive oil. I loved it, and started making it regularly. Then I saw one of the antipasti offered at Hosteria Romana owned by our friend Marco Efrati right here on South Beach (caution: Hosteria Romana is advertised as specializing in Roman-Jewish meals, but it is not kosher). This antipasto consisted of celery, red onions, and cannellini beans.

An authentic fish curry with steamed rice and fried fish is a lipsmacking recipe combo for lunch. Red snapper / Sankara fish has such an unique flavour that gives a delicious taste when prepared as a curry/Kuzhambu than fry. This is a basic fish curry preparation which can be tried with any fish varieties but best tastes with varieties like Sankara (Red snapper),  Nethili (Anchovies), Nagara (Japanese threadfin bream fish), Mathi (Sardines).

Foxtail millet / Thinai arisi was one of the staple food in ancient days. Millets are called as sirudhaniyam in tamil and its popular in Tamilnadu. Thinai / Foxtail millet is a vegan food and also gluten free cereal. It is rich in protiens, and low in fat and has good amount of fiber content, calcium, iron, potassium, magnesium and carbohydrates.

Fried rice is an easy rice recipe that is loved by most of the kids. Addition of eggs in the fried rice makes it even more favourite dish for them and this one is great for lunchbox. Addition of chilli powder gives an extra punch to this rice.

Most of us will have an aversion towards bittergourd but this recipe will definitely change our attitude towards it. This stir fry involves very less ingredients without any masalas. In this recipe, I used the bittergourd as it is and did not do any pre-preparations to remove its bitterness.The final addition of jaggery powder / Sugar gives an extra punch to the stir fry as well as reduce the bitterness. This recipe is an amazing side dish for rice.

Es’s Family Famous Chicken Pie

In my wildest dreams, I never ever would have thought it possible to have a recipe of The Recipe Hunter FB Group and Blog to feature in a magazine.

One of our Facebook members Corne Nieuwoudt Garcia, a fellow Ex-South African member, now residing in Texas, and Publisher of Neighbors of the Woodlands contacted me at the end of February.

I was totally gobsmacked and in awe when I received her initial note in which she asked if I would be interested to submit one of my own South African recipes and to feature in her esteemed magazine.

This is the easiest, quickest, healthiest, and most delicious cheesecake I’ve ever had! And it’s not even a cheesecake; it only pretends to be one. This cool brownie is on a sweet date. It’s so totally cool; it has spurned the heat of being baked but had a hot desire to be refrigerated instead. The date is delightfully sweet, as is proper for medjool dates, otherwise known as Judean dates.

I learnt  this method of making sambar from my good friend Sara. When we had guests for lunch, Sara told me to try this and it was highly appreciated by our guest. Ingredients for this is as same as any sambar but only the method differs. You try this and definitely see the change in taste.

I wanted to do this theme last month, but just could not wrap my head around what the “D” should stand for, as this is probably the most difficult one of all.  All I could come up with would be: Dates, Donuts, Duck and Dumplings.  

It’s really hard to find baking/cooking ingredients starting with a “D”, so now I would like to challenge you to email me your dish/es, be it cooking or baking with any ingredient starting with a “D” which forms part of the title of your recipe. This is an open category and I truly hope to receive a wide variety of entires with an ingredient starting with a “D” 

Please, feel free to submit any dish with an ingredient starting with a “D” and forms part of the title of your recipe.

Timeframe:
May 1st – Theme will be announced and published on The Recipe Hunter blog.
May 10th – Submissions need to be received via email @ cookandenjoy@shaw.ca

May 20th – Promote and do a post/reblog on your own blog, linking back to the original post.

On one of my visits to sunny Georgia (a country, not a state), I saw two salads on the table crowded with many unique vegetable creations. These two, however, looked very similar to each other, but different colors. One was completely green. The other – oh, the other! – it was wonderfully green and red and purple. Both were flecked with crushed walnuts, as are many other Georgian dishes, and garnished with lots of dill. Having waited out the obligatory twenty-minute toast in honor of visiting journalists (i.e. my cameraman and myself), I politely inquired.

Passover starts tonight, and the most important part of the celebration is called a Seder which means order. The order is prescribed in a little book called Haggada that we read at the table. The most important part of that is called Maggid which is the actual story of redemption and exodus from Egypt.  And the most important part of the story, repeated several times, is an admonition to share the holiday meal with a widow, an orphan, and a stranger because “you were strangers in a foreign land.” The same admonition is found in many other Biblical and Talmudic sources.
