We have successfully used this Rub on Chicken as well. See Es’s Beer Can Chicken
6 tbsp brown sugar
2 tbsp paprika
2 tbsp garlic salt
2 tbsp salt
Pinch or two of Cayenne pepper (if you like it stronger, use more)
Pinch or two of freshly ground black pepper
Finely chopped fresh rosemary (I used 1½ large sprigs)
2 racks of pork belly ribs, depending on the number of mouths you wish to feed
VOO – Virgin Olive Oil
Mix all the ingredients for the rub and set aside
Cut the each rack into 2 or 3 manageable portions.
Liberally paint the entire rack with olive oil
Now add the rub (a lot). Yes, use your hands, and rub it into the rack of rib and set aside.
Fire up your BBQ and cook till done to your liking
As our veggies, we prepared 1 large BBQ Zucchini, sliced in half lengthwise and then into thirds. Again, paint with VOO, and that’s it.
BBQ as is, till soft to your liking (we prefer it to still to be slightly crunchy) and you have beautiful grid lines on your Zucchini.
When done, serve immediate, and grind some fresh black pepper over your veggies. ♥
