Because my work involves getting onto a little bus and traveling to various town, filling my lunch box has become an important consideration. I need to cater for two meals, sometimes three, depending on the time of leaving. For example, tomorrow I will board the bus at 7am.
Here is the sandwich I prepared for today’s nourishment.
A pesto of wild rocket and basil blended into cream cheese.
This is spread thickly onto the rye bread instead of butter.
Slithers of ripe avocado pear layer on one slice.
Fenugreek sprouts add cruch and interest.
Season with black pepper and carefully wrap in paper.
Protein, carbo, fat…delicious.
Nothing like a good sandwich!
