Chicken curry is a common delicacy in South Asia, Southeast Asia, as well as in the Caribbean (where it is usually referred to as “curry chicken”). A typical South Asian curry consists of chicken stewed in an onion and tomato-based sauce, flavored with ginger, garlic, mango chutney, tomato puree, chili peppers and a variety of spices, often including turmeric, cumin, coriander, cinnamon, cardamom and so on. Outside South Asia, chicken curry is often made with a pre-made spice mixture known as curry powder.
1kg chicken pieces
1/4 cup oil
1 Tsp Tumeric
*A few cloves and pepper
*1 Tsp red chilli (powder or freshly grounded)
*Tsp ginger and garlic
*1 Tsp salt
1 Tsp cinnamon
2 Tomatoes (chopped)
6 small potatoes.
Wash and drain chicken.
Slice onions finely and fry half of above quantity in oil, till golden colour.
Add chicken to which has been added the spices marked with an * and the rest of the raw onion.
Add ½ cup water and simmer till masala is well coated over heat
Add potatoes once chicken is nearly cooked. Serve with rice and sambals.
