Gail Battered Hake Fillets

Battered Hake fillets with salad and veggie rice, it’s so quick & simple. No slaving required here😀😀Yums!!

850 g filleted hake fillets, skin removed and dipped in a bowl of cold water and 1 tbsp lemon juice.
Dry on paper towels.
Season with fish spice, garlic salt, sprinkle of garlic & herb seasoning, black pepper and sprinkle of garlic flakes.
Sprinkle with rice flour.
Set aside.

In a flat dish mix together:
1/2 cup cake flour
1/2 cup self raising flour
1/2 cup cornflour ( maizena )
1 tsp baking powder
1/4 tsp salt & black pepper
330 ml cold soda water (I used a can of light ale)
A few drops of egg yellow food colouring

Method:
Whisk above ingredients together until you get a batter thick enough to coat your fish fillets.
Coat fillets in batter and fry in sunflower oil until golden & crispy.
Drain on paper towels. Serves 3.
