Preshana's Fatfree, High Fibre Weetabix Cake

You have to try this fat-free, easy Weetabix cake! Just unbelievable, it sounds way too good to be true.

Ingredients:
2 Weetabix
125g (1 cup) sultanas or raisins (I used apricots, prunes, cranberries and dates)
200g (1 cup) brown sugar (any sugar will do)
250ml (1 cup) milk
1 egg
150g (1 cup) self-raising flour
1 tsp mixed spice
2lb loaf tin

Method:
Put the Weetabix, dried fruit, sugar, and milk into a bowl.
Break up the Weetabix a little, with a spoon, and stir it all together.
Cover the bowl with cling film and leave it in the fridge for at least 3 hours or overnight
Preheat the oven to 180’C
Put the other ingredients into the bowl with your Weetabix mix and stir it until everything is mixed in.
Pour the mix into a greased loaf tin, and bake for 50 minutes.
