Cook Tagliatelle pasta according to package instructions. Set aside.
400 g Prawn meat cleaned and marinated for 4 hours in:
2 tsp garlic & chilli paste
1 tsp grated root ginger
2 tsp chill paste or dried chilli flakes
2 tbsp garlic & chilli store-bought sauce
2 tbsp peri peri sauce
2 tsp sweet chilli sauce
2 tbsp olive oil
2 tbsp lemon juice
1/2 tsp dried sweet basil
400 g Mussels in 1/2 shells steamed for
5 – 6 mins in steamer. Set aside in a bowl.
In a large skillet add 2 tbsp butter add 5 chopped spring onions and fry for 1 min.
Add prawn meat and stir fry for 3 mins.
Add 1/2 glass white wine to pan and reduce liquid by a quarter.
Remove prawns add 3 tbsp tomato paste with 1/4 cup chicken stock and boil up.
Add mussels & prawns to pan to heat through. Stir in 1/2 cup fresh cream.
Season with salt & black pepper to taste.
Pour over cooked pasta.
Finish with basil leaves roughly chopped, squeeze juice of 1 lemon.
Serve with green salad.
If not using wine increase liquid by adding an extra 1/4 cup chicken stock
