Melanie’s Nutty Banana Cherry Loaf

TRH Melanie's Nutty Banana Cherry LoafThe only reason why I buy bananas is not because I eat bananas but just to wait for them to ripen because I love nutty banana bread. I had a few cherries in the fridge so threw them in too. This doesn’t last very long in my house.

3 ripe bananas, mashed
1 cup white sugar
2 eggs
¼ cup melted butter
2 cups flour
1 teaspoon baking powder
½ tsp baking soda
1 teaspoon salt
4 tblsp crushed pecan nuts
4 tblsp chopped cherries (dusted in flour)
1 tsp vanilla extract

Preheat oven to 170 degrees grease a 9×5-inch loaf pan.
In a mixing bowl sift flour, baking powder, baking soda and salt together.
Add the sugar and nuts and stir.
Add banana, melted butter, egg and vanilla extract to a blender and blend well (or use electric hand mixer).
Add to dry mixture until a smooth batter is formed.
Fold in floured cherries.
Pour into the prepared loaf pan.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean.
About 45 minutes to an hour.

About cookandenjoyrecipes

I have a passion to cook and experiment, and have gathered recipes for almost 50+ years (paper and then electronic). I felt it an absolute waste to just toss all those wonderful recipes in the garbage and forget about them, thus decided to put them to good use and started “The Recipe Hunter” Facebook page: The Recipe Hunter (Cook &Enjoy) and the Blog
