Gail’s Leek and Potato Soup

TRH Gail's Leek and Potato Soup
Hi everyone soup on the menu tonight        

Ingredients:
4 tbsp butter
5 – 6 leeks washed and chopped, rinse well to be free of soil grains
5 spring onions chopped
2 sticks celery chopped
2 tsp minced garlic
4 potatoes diced
1/8 tsp ground nutmeg
1/2 tsp ground coriander
2 1/2 cups vegetable stock
2 1/2 cups beef stock
125ml fresh cream
Salt and pepper to taste
Crumbled feta cheese and chopped chives/parsley

Method:
In a large saucepan, add butter, leeks, celery, spring onions, garlic and sauté gently, add spices and sauté a few mins more.
Add potatoes and simmer further for 2 mins.
Add stock and simmer for 25 mins or until potato is cooked.
Transfer to blender, add fresh cream and blitz until smooth.
If too thick add more stock. Check for seasoning.
Serve with crumbled feta cheese and chopped chives.
Can substitute with sweet potatoes.
