My daughter asked me to make Fettucine Alfredo but I decided to deviate slightly from Alfredo Sauce and instead I made PASTA WITH MASCARPONE SAUCE. You can add mushrooms if you want but I chose to stick to plain creamy pasta and cheese. It was delicious.
250 gr pasta (of your choice) – boiled in salted water and 1 tsp olive oil till al dente
Sauce below should be made simultaneously while pasta is boiling.
4 tblsp butter
2-3 garlic cloves, finely chopped
250 ml fresh cream
1 tub mascarpone cheese
3 tblsp cream cheese
1 tsp onion powder
1 tsp salt
1 tsp freshly ground black pepper
½ cup grated parmesan cheese
2 tblsp chopped Italian parsley (plus extra for garnish)
Melt butter and stir in garlic.
Add cream and bring to near boiling point.
Add Mascarpone and cream cheese, reduce heat and stir slowly till cheeses have melted.
Add onion powder, salt and pepper.
Add parmesan cheese and stir till melted.
Stir in chopped parsley. Drain pasta and add to sauce. Mix to combine.
Garnish with extra parsley, parmesan and black pepper. Must be served immediately.
