Rashida’s Semolina Cake

TRH Rashida's Semolina Cake

Melt 250g margarine with milk and sugar
2 cups milk
1½ cup sugar
Remove when dissolved and cool completely

Combine dry ingredients
1 cup self-raising flour
1 cup coconut
1 cup semolina
½ tsp salt
2 tsp baking powder
1 tsp fresh elaichi powder (cardamom)
1 tsp nutmeg
1/4 cup chopped almonds

Mix the wet ingredients with the dry
Add elaichi and nutmeg
Mix till smooth
Grease casserole dish well & pour in the mixture, and sprinkle with almonds
Bake 180C for 30 minutes or more till golden brown
