One cup is 250 ml
3 cups luxury fruit cake mix (one with cherries and nuts)
125g stork bake
1 1/4 cup sugar
1 ½ cup water
5 ml bicarbonate of soda
650 ml self-raising flour
Optional: 50g dried cranberries / walnuts / pecan nuts and extra cherries cut in half
Boil together butter, sugar, fruit mix, bicarbonate of soda for 10 minutes on stove top.
Set aside and cool off.
Once mixture is cooled add the sieved flour and eggs and mix well with spoon.
Pour mixture in well lined greased loaf pan
Bake @ 180C for 15 minutes, thereafter reduce temperatur to 170C and bake for ±40 min or until skewer pen comes out dry.
