TRH Feriel's Spinach, Chicken and Mushroom and Coconut PancakesPancake Batter
4 eggs
500 ml Cake flour
2 cups water
1 cup fresh milk
2 teaspoon soft butter
One teaspoon baking powder
Beat with beater & let’s stand for 30 minutes
Fry in greased non stick pan until brown yummy
Makes ± 27 pancakes

Filling:
Saucy Chicken Strips

1 kg chicken strips
Punnet mushrooms
½ bunch spinach
1 tsp salt
1 tsp chicken spice
½ tsp lemon pepper
3 tbslp Steers or Nandos (SA products) Peri Peri sauce
3 tblsp tomato sauce
3 tblsp mustard sauce
3 tblsp mayonnaise
1 tblsp lemon juice

Method
TRH Feriel's Spinach, Chicken and Mushroom and Coconut Pancakes3Mix all above and marinate chicken.
Cook in a little ghee till done.
Add cheese & serve warm
OR
with white sauce

White sauce:
1 cup milk
1 heaped tablespoon cake flour
lemon pepper and salt.

Method:
Heat milk in microwave
Add cake flour paste with little water.
Add seasoning and microwave and stir until sauce thickens.

Coconut filling:
Ingredients
1 teaspoon butter
1 cup coconut
½ cup sugar
2 stick cinnamon
2 whole elachi (cardamon)
Pinch fine elachi
½ cup water

Method:
Add all together in small pot and cook until all water is cook away on slow heat.
