Selvie’s Coffee Cream Ganache Cake

Ingredients
3 Jumbo eggs
1 cup castor sugar
½ cup milk
1½ cup flour
4 level tsp baking powder
125 g butter
2 tsp vanilla essence

Method
Put all ingredients into a Kenwood and beat for 4 minutes.
Divide mixture into two greased baking pans.
Bake at 180C for 25 minutes.
Cool cake completely and ice with coffee cream icing and drip ganache over or decorate as desired.

Coffee Cream
125 g butter
2 cups Icing Sugar
Dilute 1 tsp Nescafe coffee in 3tsps of warm water.

Method:
Cream butter and sugar well.
Add coffee mixture and beat well.

Ganache
1 Slab plain chocolate
1 small tin Nestle cream

Method:
Melt chocolate and stir in the cream immediately.
