Dalia’s Mushroom and Leek Quiche

TRH Dalia's Mushroom and Leek Quiche

Ingredients and Method:
1 bunch leeks – about 6 large leeks cut into rings.
Cook in water with 2 vegetable cubes till soft.
1 x 250g mushrooms in a little bit of margarine till soft and no liquid.
Mix together leeks and mushrooms
Grate approximately 200g cheddar cheese
Add 125ml cream and 3 beaten eggs to the above.
Line greased dish with slightly rolled out ready puff pastry
Pour the above mixture in and spread evenly
Bake at 180C (350F) till golden brown for approximately 45 minutes.
