1 large zucchini (grated)
1/2 cup shredded parmesan cheese
1/2 cup shredded Sharp cheddar cheese
3 to 4 heaped teaspoons of corn starch.
3 tbsp of olive oil
Pepper to taste (optional)
Remove the ends of the zucchini and grate into a medium bowl.
Add the parmesan cheese,egg and the corn starch and the pepper if used.
Mix these together well.
Divide into 4 equal patties and pan fry on a medium heat in the olive oil until nicely browned.
Turn each patti over and place equal amounts of the cheddar cheese on each one.
When the cheese has melted, place one patti over another to form 2 large patties.
Place in oven to keep warm while preparing the rest of your meal, or serve immediately.
