TRH Gail's Hungarian Goulash

Lunch today was yummy, my family’s comfort food. Hope you enjoy😊😊

1 kg soft beef shin cubed
5 large onions chopped (seems excessive, but they make the gravy and add depth to this dish)
4 – 5 tbs olive oil
3 cloves minced garlic
2 small chopped chillies to give a kick (optional)
2 tbsp vinegar
3 tbs paprika
2 tsp dried marjoram
3 tbsp tomato paste
Salt and black pepper to taste
1 cup chicken stock, use if necessary

In a large saucepan saute onions, garlic and chilli in oil on Low heat, about 10 mins until tender.
Take off stove add vinegar and paprika and stir, place back on stove add your cubed beef, brown the meat in saucepan on med heat, add marjoram tomato paste, salt and black pepper.
Turn down the heat to cook on low heat for 1½ – 2 hours until the meat is tender.
The onions make the liquid in this dish use stock if required.
Serve with mash potato or pasta
