Rashida’s Shortbread

Ingredients
500g soft butter
1 1/4 cup castor sugar or icing sugar
3-4 cups flour
pinch salt

Method:
Cream butter and sugar till white.
Add 1 cup flour and mix.
Add balance of flour slowly to form a nice soft dough.
Take note you might use all of the 4 cups or less.
Set in round baking tray and prick with a fork or make like a sausage and slice.
Bake on 160C for 15-20 minutes.
Remove and slice while still warm.
Sprinkle castor sugar
