Gail’s Coconut Ice

TRH Gail's Coconut Ice
Ingredients:
3 1/2 cups desiccated coconut
1 tin sweetened condensed milk
3 cups sieved icing sugar/confectioners sugar
1/2 Teaspoon of vanilla extract
**1/4 cup Nestlé cocoa powder
**1 tbsp milk

Method:
Line a 24 cm baking tin with parchment paper and grease with a little butter.
Add all ingredients in a bowl except**the cocoa and milk.
Stir well until all incorporated.
Halve the mixture and spread out flat and evenly in the tin using your hands.
Add cocoa and milk to the other half of mixture.
Stir well to combine then layer this over the white layer in the tin.
You can also use a few drops of food colouring of your choice for the second layer. Refrigerate for a minimum of 3 hours or overnight.
Once set, cut into bite sized squares using a knife dipped in boiling water and wiped dry.
