TRH Nazley's Half Moon Shaped Roti Paratha's

Are you always in a rush to get work. Once at work you end up buying food or snacking on unhealthy foods.
It’s great to pack your own lunch for work as you know what is going into your body and how the food is being prepared.
Paratha’s is a great meal to take with to work.

Roti dough
Ingredients:
2 cups flour
Salt to taste
Enough hot water to make a soft, smooth dough

Method:
Mix all together to form a soft dough.
Once done allow to rest for 20 minutes.
Roll out the dough on a floured surface.
Then rub on ghee or butter in the center. Add a little extra.
Roll the rolled out dough into a swiss roll.
Cut into pieces and form the roti balls (spiral shape).
Cover and allow to rest for an hour.

Chicken and potato mixture.
Ingredients:
2 chicken breasts cut in cubes.
6 baby potatoes , peeled and cubed.
2 baby eggplants cut in cubed.
1 onion finely chopped.
1 teaspoon whole cumin seeds.
1/2 teaspoon crushed curry leaves (I used dried curry leaves and crushed it myself).
2 teaspoons khokney masala.
Salt to taste.
1/2 teaspoon turmeric.
1 teaspoon fine cumin masala.
4 Tablespoon tomato sauce.

Method:
Braise the onion and whole cumin seeds.
Add the potato, eggplant and turmeric.
Cover with a lid and allow to cook for 10 minutes.
Add the rest of the masala, chicken and tomato sauce.
Cook till soft. Do not add water.
Once done, add freshly chopped coriander leaves.
Allow to cool off.
Roll out each roti balls on a floured surface.
Place some chicken and potato mixture on half the roti, add cheese and more mixture.
Fold over like a half-moon in shape and seal with a fork on the edges.
The rolled out roti’s must not be too thin or too thick.
Heat a pan with oil and fry on each side till golden brown.

These roti balls recipe can also be rolled out in a circle and fried off as normal.
To be eaten with curry or roast. As you wish.
