Tonight for dinner we had a lovely braai/barbecue with salads and garlic bread.
This creamy dreamy potato salad was top-notch. Enjoy!!
10 x Baby Potatoes skin on
Boil up in saucepan until tender. Drain.
Cut potatoes in half when slightly cooled. Let cool down completely.
In a bowl add 4 chopped spring onions,
2 chopped sweet & sour gherkins,
3 chopped pickled onions,
2 small green chilli’s chopped,
1/2 tsp dried parsley,
1/2 tsp dried dill,
handful of chopped chives,
salt to taste,
crack of black pepper,
1/2 tsp cayenne pepper,
1 cup of mayonnaise,
1 x 230 g tub of Lancewood medium fat spring onion & chives cream cheese.
2 chopped hard-boiled eggs.
Mix all these ingredients together until smooth then add the cut potatoes and stir well.
If mixture is too thick add a little milk to thin.
Place in fridge until ready to serve.
