Melanie’s Hawaiin Grilled Pork Chops with Fried Rice

I never serve mashed potato and rice together but I had left over rice and hubby doesn’t eat rice and requested mashed potato. Anyway my low carb diet took a dive but who cares, it was delicious 🙂
HAWAIIN GRILLED PORK CHOP WITH FRIED RICE
GRILLED PINEAPPLE & TUMERIC FLAVOURED MASHED POTATO
HAWAIIN PORK CHOPS
Ingredients
4 Pork loin chops
2 garlic cloves crushed
1 tblsp Shaoxing rice wine or apple cider vinegar
1 cm ginger grated
½ fresh pineapple juice
¼ cup soya sauce
1 tsp kosher salt
½ tsp crushed black pepper
4 slices of fresh pineapple

Method:
Mix everything in a bowl including pineapple ensuring that pork chops are well coated. Refrigerate for an hour.
Preheat oven to 180 degrees and bake chops for 30 minutes turning and basting halfway. Grill pineapple in cast iron griddle pan till charred, alternatively, place on top of chops in the oven the last 10-15 minutes.

EGG FRIED RICE
Ingredients
½ cup frozen peas
¼ cup diced frozen carrots
2 ½ cups cooked rice (preferably day before)
3 eggs lightly beaten, drop of water salt and pepper
4 slices cooked ham (chicken, beef, pork, shimp shredded)
3 spring onions chopped
100 gr bean sprouts
1 tsp salt
1 tsp light soya sauce
1tsp sesame oil

Method
Add ½ TB oil to wok. Add peas and carrot with pinch of salt.
Add cooked ham (chicken, beef, pork or shrimp).
Add cooked rice stir one minute and remove.
Add bean sprouts and stir one minute and remove.
Add egg, draw toward you with spatula then mix through.
Push to sides – add rice and sprouts and mix egg through.
Add salt, soya sauce and sesame oil and mix through.
Add spring onion and mix.

TUMERIC MASHED POTATO
Ingredients
4-5 Potatoes peeled and washed
1 chicken (or vegetable) stock cube
½ tsp turmeric
1 tblsp white onion soup powder
1 tsp salt
2 tsp lemon black pepper
4 tblsp butter
Milk and cream (about a cup and a half mixed)

Method
Cut potatoes in quarters. Add to pot of cold water and add stock cube and turmeric.
Boil until tender. Drain and return to same pot.
With potato masher, mash potatoes until most lumps gone.
Add the soup power, salt, pepper, butter and half the milk.
Using an electric hand mixer mix the mashed potatoes gradually pouring enough milk till you get a smooth texture.
