Sherri’s Jam Tarts


125g margarine
125ml castor sugar
1 egg
5 ml vanilla ess
500 ml cake flour
10 ml baking powder
Icing sugar
Chopped nuts
Desiccated coconut

Beat margarine and sugar well.
Add egg and vanilla ess. Beat until light and fluffy.
Add sifted dry ing. Knead well.
Press 3/4 of the dough into a greased tin/casserole. Spread on jam.
Bake at 180C for 20 mins
I used strawberry jam today but any jam will do.
I sometimes use apricot jam. My favourite.
On half the dough I left plain.
On the other half I sprinkled on nuts and coconut. Grate remaining dough over the jam.
When baked cool.
Cut into squares and dust with icing sugar.
