Preshana’s Malabi

Malabi is a Middle Eastern milk based custard flavoured with rose water.
It can be served with a fruit syrup, dried fruit and toasted nuts.
I served mine with toasted dedicated coconut, pistachios, slivered almonds, dried cranberries and apricots.

4 cups whole milk
3/4 cup corn starch
1 cup heavy cream
1/2 cup sugar
1 Tablespoon rose water

Mix one cup of milk with the corn starch to make a slurry.
Stir until the cornstarch dissolves completely.
Heat the remaining 3 cups of milk, heavy cream, and sugar in a saucepan and bring to a simmer.
Pour in the milk and corn starch mixture and cook over low heat until thick.
Stir in the rose water.
Remove from stove and pour into serving glasses or dishes.
Allow to come to room temperature.
Refigerate until thoroughly cooled.
Top with your favorite fruit, nut, or syrup.

I have a passion to cook and experiment, and have gathered recipes for almost 50+ years (paper and then electronic). I felt it an absolute waste to just toss all those wonderful recipes in the garbage and forget about them, thus decided to put them to good use and started “The Recipe Hunter” Facebook page: The Recipe Hunter (Cook &Enjoy) and the Blog
