Nazley’s Italian style eggs

Ingredients:
3 eggs.
6 baby onions, peeled and sliced finely.
4 large tomatoes cut in chunks.
Salt and crushed black pepper to taste.
Italian herbs (oregano, thyme), 1 tspn.
1 large potato, peeled and cut in cubes.
1/2 packet tomatoe paste or 6 Tblsp tomato sauce.

Method:
In a pot add the onions , tomatoes and potatoe, tomato paste/sauce, salt, pepper, herbs. No oil or butter needed. Its a slow process, so it doesn’t need oil or butter.
Add 1 small cup water.
Allow to cook well till the sauce is thick and yummy. It took 30 mins.
Once thick, and water has evaporated crack the eggs on top and sprinkle extra salt and crushed black pepper.
Put the lid on the pot and put the heat off of the stove.
Allow to poach in the sauce.
After 10 minutes serve warm with baguettes or eat as is.
Very yummy, the sweetness of the tomatoes is divine.
The egg is freshly poached in the sauce.
