Vashnee’s Moist chocolate cupcakes with chocolate buttercream


1/2 cup cocoa powder
1/2 cup boiling water
1 cup cake flour
1 cup caster sugar
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1/2 cup full cream milk
1/4cup sunflower oil
1 egg
1 teaspoon vanilla essence

Preheat oven to 180°C
Mix cocoa and boiling water to make a smooth paste.
In a bowl dry whisk flour, sugar, baking powder, bicarbonate of soda.
In another bowl, mix milk, oil, egg and vanilla until light and frothy.
Sift half the flour mixture into milk mixture and mix well.
Add cocoa paste and mix well.
Next add remaining flour and mix until just combined.
Spoon into cupcake cases (half filled)
Bake about 15-20mins, or until toothpick comes out clean.

Chocolate Buttercream icing
½ cup butter
2½ – 3 cups icing sugar (sifted)
2 Tablespoons cocoa powder (sifted)
2 teaspoon vanilla essence

Place all ingredients in a mixing bowl until smooth and creamy.
If buttercream too stiff add few teaspoons milk, or if too soft add more icing sugar or cocoa powder.
