Vashnee’s Cinnamon & Almond Banana Bread


3 very ripe bananas
1/3 cup melted butter
1 teaspoon bicarbonate of soda
½ cup demerera sugar or brown granulated sugar
1 large egg( lightly beaten)
1 teaspoon vanilla essence
1 ½ cups cake flour
1 teaspoon cinnamon/mixed spice powder
½ cup roughly chopped almondsOR Walnuts

Preheat oven to 180°C
Line a loaf tin with baking paper
In a mixing bowl, peel & mash bananas with a fork
Add 1 teaspoon bicarb and melted butter and mix with a fork
Add the sugar and combine with a fork
Add lightly beaten egg and vanilla to mixture and combine well
Add sifted flour and cinnamon powder and incorporate until just combined
Retain a handful of almonds and stir in the remaining into batter
Pour batter into loaf tin and sprinkle with almonds
BAKE @ 180°C FOR 50-60 MIN or until nicely browned and a skewer comes out clean after inserting
